Hi Steph, thanks for taking the time to reply. Cooked or raw, that’s a good question. I have no idea! Charles mentioned a beetroot salad in his harvesting video when he was pulling some golden beetroot. I assumed it might be a raw beetroot salad. I often roast beetroot with garlic and herbs in olive oil and balsamic vinegar, that’s nice. Very much looking forward to your next book
