It may not be what you’re looking for, but I’ll offer one I like myself, it’s very simple, for raw beetroot of any colour.
Peel and grate the beets, then just dress it rather like a Mediterranean lettuce salad:
A bit of salt
Pepper if you like
White or regular balsamic vinegar to taste (or experiment with other vinegars)
Extra-virgin olive oil
spring onion and/or garlic, minced
…and Bob’s your uncle! I find they can take quite a bit of oil and vinegar for my taste. Some lovely additions can include: shredded carrot, thinly sliced celery, sultanas — but I usually don’t, it’s great just as its beety self!
