We took on a bindweed infested allotment plot 3 years ago. We covered entire plot in cardboard and black degradable mulch. We then made beds of green waste compost/manure on top of that so we could grow some stuff that season. We went round with a trowel a few times a week to remove any shoots coming through and covered a couple of bad patches in more cardboard. Second year we had a few shoots, third year none. We were meticulous about not letting it grow so weakening it all the time. There were existing fruit bushes on the plot. I did remove bindweed roots around them as much as possible, we then mulched with manure/compost and cardboard around them.
