Hello Tris, yes they should stand outside for another month and I aim to harvest before say any frost of -3C or lower. A few of the more advanced heads risk splitting a little, best eaten first.
Then they store well in a cool shed for example, even until February, just peel off any mouldy outer leaves, every month or so.
Or make sauerkraut!
Well done on your savoys. I have some Wirosa savoys for March harvest.
