Ah shucks John, you have entered the world of leek moths, horrible pests whose caterpillars start tiny, in the heart leaves, and you rarely see them.
It’s why I mesh most of my leeks from planting until about 10th September when the moths stop laying/caterpillars stop eating and they pupate for winter.
I would try cutting some and leaving others, see which works best.
