If no other squash or courgette nearby to cross pollinate, yes to keeping seed. Otherwise they may not come true, but may be good…
As for eating them, the restaurant I supply said UK are not good but they succeeded with Buttercup seeds, after roasting & then shelling I think. I want to try some here.
