Simply leave them unpicked until October by which time I hope the pods will be yellow with dry or drying beans in, to shell out and finish drying indoors before storing in jars. Or you can freeze them if half dry. Czar makes butterbeans, both are delicious to eat like any dry bean, presoaked before cooking.
