    I see that you are growing Czar and Borlotti beans for drying. What do you use them for and how do you prepare them.

     Simply leave them unpicked until October by which time I hope the pods will be yellow with dry or drying beans in, to shell out and finish drying indoors before storing in jars. Or you can freeze them if half dry. Czar makes butterbeans, both are delicious to eat like any dry bean, presoaked before cooking.

    I have been that I am hoping to use some for fresh and some for drying. Can I harvest some early beans and then leave the last for drying? Or do I need to leave the plants for drying un picked?

     Yes you could pick a few but I would vote for leaving them all to mature for picking from mid September as dry pods. The more you pick now, the later your harves of dry beans will be, as you are picking the first ones now.
