North-south is ideal but actually matters only when you grow tall vegetables which, on east-west beds, can then shade plants to the north.
I suggest laying out beds for the most convenient access, whatever orientation, because you need to enter all pathways easily. Also I always run beds up and down a slope and not across it, so that compost and water do not roll down off the beds. At Lower Farm I am lucky that both criteria result in north-south beds, but I do have a successful eat-west polytunnel!
