hi Charles, we have saved two of our favourite vegetable onions (Ailsa Craig) from last year to save their seeds this year, because they are not easy to find, and even then they are sometimes old.
When is the best time to plant them out? They still look perfect, no growth visible even though the pack said they would only store until Christmas. Is it important for them to be showing green before they are planted out?
Do they cross pollinate easily?
We only have the two and we want to get it right!
Alchemical onions are tricky, I am unsure that 2 plants is enough for good cross-pollination, to give vigorous plants with a wide gene pool.
But I cannot be sure, and I recommend planting them now, then they green up in the soil with roots etc.
If you are in a zone with damp summers, beware of mildew: I lost all my outdoor onion seed, but had a reasonable harvest in the polytunnel.
Beware nearby flowering alliums too!!
