Dug up the first of my yacon on Friday. Tasted quite bland but should sweeten on a sunny windowsill so I am told. Does anyone have any ideas/recipes for it’s use. I have read Marc’s article in the Guardian and am willing to give anything a try.
Janet, you could tweet Sue Hepworth @spookymuffin who made syrup from the roots!
