    General advice seems to be that after harvesting oca should be placed on a sunny windowsill for a couple of weeks so they turn sweeter. I’ve had my – modest – harvest on a sill for 5 days and they are starting to turn all rubbery. Is this normal, does it affect the taste? I’ve only tried them while they were fresh and crisp so far, which I really liked, these rubbery ones don’t seem terribly appealing.

    Any advice based on experience would be much appreciated.

    Hawfinch that is strange, I don’t know why: mine always stay crisp.
    I just ate one, 9 days on the windowsill, it’s reasonably sweet and crunchy.
