    Hi Charles

    I have pak choi in the poly tunnel and, having not grown it before, I am wondering how to harvest it. Some videos on youtube (not yours!) show it being cut completely across a few inches above ground level, with new shoots coming from the centre in the following weeks, but this method seems in contradiction to the method, learnt from you, of pulling off individual leaves as for RdeG lettuce and mustards. What is your harvesting method for pak choi?

    I read the other day that Stephanie Hafferty, Charles’ partner, cuts them off at the base, whereas Charles seems to pull off individual leaves. So I guess both ways go.

    Yes Steph does that to cook whole and she has more space available.
    You get less harvest in the end because it does not regrow.
    If she wants a stir fry, and here for salad, we pick outer leaves for several months sometimes.
    And the roots are fragile so sometimes it’s best to cut the outer leaves! Not pull.
